Just when I thought August was swift, September apparently was swifter! It’s like my September had just 15 days b’cuz it was unbelievably fast. Had a couple of birthday celebrations in the family; I became a year older, my little girl cut her first birthday cake and one of the Wuyika girls was one year older.
Today, I am welcoming the new month of October with some sweetness; banana cookies! So how did I come about the idea of making these cookies? I had some two miserable bananas that were gradually moving towards the grave. They were over ripe and no one seemed to love them anymore, so I came to their rescue and decided to give them more vitality via cookies
What you need
- 3 cups all-purpose flour
- 250 grams butter
- 100 grams sugar or 1/2 a cup
- 2 eggs
- 2 ripe bananas
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon powder
- A pinch of salt
Process
Cream sugar with butter, salt and sugar
Mash banana, beat in baking powder and pour into flour
Beat eggs and add to the flour mixture
Sprinkle the cinnamon
Mix everything together until all the ingredients are fully incorporated.
Drop spoonfuls of the above melange onto a baking sheet (see below).
Bake in a pre-heated 200 degrees oven for 10-15 mins. Expect a creamy to lightly brown coloration.
Have a beautiful October filled with much sweetness!

These look interesting. I have made banana bread and banana bars but never banana cookies. I am always on the lookout for recipes with bananas as my husband has a thing for purchasing bags of bananas that are past their prime.

Banana bars? Now that sounds even more interesting. It is always helpful to have other recipes for over ripe bananas especially when you r husband buys them generously:-)
